Trying to follow my own advice today I headed to the freezer to inventory and found turkey legs. I pulled out the insert of my crockpot (left) to brown them first, still frozen, in a little Virgin Coconut Oil. I started to reach for my typical spices for turkey legs but decided to experiment. So I found any spice that was associated with Indian cooking and mixed up a blend to season the legs. I added paprika, cumin, coriander, cardamom, nutmeg, clove, turmeric, fenugreek seed, kala jeera, charnushka , cayenne and salt & pepper to taste. I don’t like to measure but it was about a teaspoon of each. As the first side browned I coated the legs, turned them over and coated the other side. Put the crock pot together, added a cup of water and some bay leaves and put it on low.
Well, in 8 hours I’ll find out how they turned out. My son Andy cooks a lot of Indian food and he thinks this combo sounded interesting. The house smells heavenly. Once they were done I didn’t even wait for dinner to sample. They were great. With the leftovers I think I’ll make soup.
I’m headed out for an Indian cookbook so I can stop guessing on spice combinations. If you have any favorite Indian recipes please share them with us.
